ORIGINAL STORY: 12/4/24
I guess it's fitting that today (December 4th) is National Cookie Day!
Last night, I was driving on my way out of Downtown Cedar Rapids on 1st Ave SW. As I was passing Pickle Palace, I noticed a new sign at one of the shops in the Kingston Yard development that got me excited. It was for Insomnia Cookies!
According to the official website, the concept for Insomnia Cookies was born in 2003 in a college dorm at the University of Pennsylvania. It was late, and founder Seth Berkowitz "wanted something sweet, warm, and he wanted it brought to his door." Cut to 2006, and Insomnia now has its first brick and mortar location in Syracuse, New York. The company has come a long way since then. In 2021, Insomnia Cookies celebrated its 200th store opening, and it is still continuing to grow!
Insomnia Cookies is known for, you guessed it, warm cookies. The company offers them individually or by the box. Classic cookie flavors include chocolate chunk, oatmeal raisin, peanut butter chip, white chocolate macadamia, snickerdoodle, and more, and they even have vegan options. But, you don't want to miss out on the "deluxe cookie" menu, either. There's triple chocolate, s'mores, salted caramel, confetti, chocolate peanut butter cup, and oatmeal chocolate walnut.
The menu at Insomnia also has some other options, like brownies, ice cream, ice cream cookie sandwiches, and cookie cakes!
Many Insomnia Cookies locations are based in college towns, so it only makes sense that Cedar Rapids is finally getting one of its own! The page on the website says the 1st Ave SW location is "coming soon," and that the hours will be:
